Drying process begins on the tree, then continues on plastic sheets under sunlight. Figs are sieved and selected under UV lights to remove aflatoxin, washed with salty water, and passed through an X-ray scanner and handpicking steps for removing foreign material and defects. Selected figs are passed through hot water to make them soft and juicy, then weighed and packed automatically. Packages are pasteurized and put into carton boxes. Naturally gluten-free, no sugar added, and a source of fiber.
