Organic Vegan Thai Green Curry Paste

Heat 2 tablespoons of sunflower oil in a pan over high heat. Add a medium sliced onion and 2 crushed garlic cloves and fry for 2-3 minutes to soften. Add 500 g of vegetables of your choice and fry until lightly browned. Stir in ½ jar of Geo Organics Thai green curry paste and cook for a few seconds. Add 300 ml of coconut milk, 3 chopped green chillies (optional), and 1 tbsp of soft brown sugar. Bring to the boil and then simmer for 10 minutes stirring occasionally. Stir in 1 large pepper, dressed and thickly sliced, and 2 tbsp lime juice. Cover and simmer for 10 minutes. Add 2 tbsp of fresh chopped coriander and season to taste. Serve with boiled rice and garnish with fresh coriander leaves.
